Reduced Fat and Sugar Brownies recipe

I started with the brownie recipe from the 1975 edition of The Joy of Cooking and made alterations from there. Here’s my recipe. I mix mine by hand but I’m sure you could use any kind of mixer.

Melt 4 oz Baker’s semisweet chocolate (one box is 4 oz) for a few seconds in the microwave.

Add 1 tsp instant coffee and 1 tsp vanilla.

Add 1/4 cup butter and 1/4 cup unsweetened applesauce and mix well.

Add 4 eggs and mix well with a fork.

Add 1/2 cup sugar and mix.

Add 1 cup flour, mix.

Bake at 350 for 20-25 minutes. A little under is better than a little over

For comparison, the original recipe called for 1/2 cup butter and 2 cups sugar.

If you don’t have chocolate, 2 2/3 cup cocoa plus 1/2 Tablespoon fat = 1 oz chocolate.

So now we can claim that brownies are healthy… right? Thanks so much for sharing!!!

Yes! Lots of protein in those eggs :grinning_face_with_smiling_eyes:!

Mmmmm. I love brownies. This recipe looks easy to do. Thanks for your update to the delicious, but unhealthy, version.

Looks so yummy! My husband is diabetic so I’m always on the hunt for good, low sugar deserts.
