Air Fried Stuffed Mushrooms

I recently got an air fryer and have been trying out different things. Today, I stuffed mushrooms. I loosely followed the pattern from the book.

I processed a slice of oatnut bread and added in some pepper, a teaspoon or so of a jar of italian pesto, added some garlic chives and green onion, and mixed with 2 teaspoons of olive oil. I stuffed the hollowed out mushrooms and put them on a oiled tray in the air fryer on 400 for about 8 minutes. The recipe called for 10 min, but as you can see, even at 8 min the breading started to burn. The breading inside the mushroom was good.

I enjoyed this and will try it again. While I posted it under appetizer (it was listed that way in book), I am the only mushroom eater in my house, so this was lunch for me! I bet you cheese lovers could melt your favorite cheese over these and it would be tasty for you, too.

Yesterday I made (and tried) fried pickles for the first time. I was a fan. No one else was. Today, I am going to try a mini chorizo empanada recipe from the book. Hopefully look for a post on that one.
