Apple, Cranberry & Pecan Baked Oatmeal

Apple, Cranberry & Pecan Baked Oatmeal
(Serves 6)

  • 3 tablespoons unsalted butter, melted
  • 2 cups milk (dairy or non-dairy)
  • 1 large egg
  • ¼ cup brown sugar
  • 2 tablespoons maple syrup (or honey)
  • 1 ½ teaspoons vanilla
  • 2 cups old-fashioned oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • 1 cup chopped apple
  • ½ cup dried cranberries
  • ½ cup chopped pecans

Preheat the oven to 350 degrees and lightly grease an 8-by-8-inch baking pan.

In a large bowl, combine the milk, egg, brown sugar, maple syrup, melted butter and vanilla; whisk until smooth.

Add the oats, baking powder, cinnamon and salt, and stir until combined. Add in 2/3 of your apple, cranberries, and pecans.

Pour the mixture into the prepared pan. Sprinkle the remaining fruit and nuts evenly on top.

Bake, uncovered, 35 to 40 minutes. Cool for 5 minutes before serving.

Tip
Can be refrigerated for up to 5 days. Reheat, covered, at 350 degrees for 15 to 20 minutes, or reheat individual portions in the microwave for 30 seconds to 1 minute.

Looks delicious! What is it like texture-wise? (should I be thinking oatmeal or granola bar or somewhere in between?)

This sounds like a yummy way to start the day!

Definitely NOT granola bar, because it’s soft. Slightly cakey. More like a very moist, chunky, oatmeal muffin. Not as sludgy as oatmeal can sometimes be.

I will say between the 1/4 cup brown sugar and the 2 T of maple syrup, it is plenty sweet. You could even remove 1-2 T of sweetener if desired, but you still want some of that maple-brown sugar flavor.
