I love baba ghanoush. It is similar in flavor profile to hummus (which I also love), but made with eggplant rather than chickpeas. I used to be able to buy it at Costco, but they discontinued it several years ago and never brought it back. So I learned to make it myself. Eggplant is abundant at the farmers market right now, so it was the perfect time to make some of this delicious dip. I eat it with pita, naan, or tortillas, depending on what we have in the house.
Oh wonderful! Baba ghanoush is my favorite way to eat eggplant but my dear partner doesn’t share this love and my children launched an anti-eggplant campaign when they were younger. But maybe I can make some with your recipe just for myself to enjoy… Yum!! Thanks for sharing!!!
Does this freeze well? If so, would be a good candidate for pot luck events. Lately everyone seems to be on a “cowboy caviar” kick so something different would enhance the appetizer tables.
Thanks for sharing!
My kids have also launched an anti eggplant campaign, and my partner also doesn’t care for baba ghanoush (or hummus). Fortunately this recipe is quick and easy, so I don’t mind making it just for me. It makes a great lunch!
I haven’t tried freezing it because eggplant typically doesn’t freeze well…Then again freezing often just affects texture and with this already being mush maybe it would be fine. Hummus certainly freezes well. You should try it and let me know if it works!
I am the only one who likes eggplant in my family as well!
This looks easy and delish!
I made this when I was 20. At the time I didn’t like hummus but still made it for my partner at the time and his brothers. And I definitely didn’t like eggplant. (my tastes have changed a lot).
So I thought I was being nice making baba ghanoush even though I didn’t like it. they all tasted it and gave each other side glances and I was like what? you don’t like it?
Turns out I forgot to cook the eggplant.
