Back in the day when my children were small, WIC used to give us canned salmon every month. I have never been a huge canned salmon fan, but I do love crab cakes. So I modified a crab cake recipe to make salmon patties instead. We like them so much that I am still making them, many years later. I shape them with a round cookie cutter, and bake them rather than frying them (as it is both easier and healthier). I typically serve them with either couscous or potatoes, a veggie, and a lemon honey mustard type sauce.
Oooh, recipe, please! I’m not a salmon fan, but husband and son both love it. This would be a new way to serve it.
Oh, these sound so good! And way to use what you had to make something you want!
I added pictures of the recipe to the original post (sorry they are messy, I didn’t have time to type it so I just took a picture of my recipe card). ![]()
Edited to add: I don’t have a recipe for the sauce because I wing it every time. It has Dijon mustard, mayonnaise, garlic powder, onion powder, lemon juice, vinegar, and honey in it, all to taste.
Thanks! They are yummy. We seem to do a lot of cooking along the lines of “how do I make this random ingredient taste good” in our house. ![]()
These look delicious! Thanks for sharing the recipe.
I sometimes mix mushed canned garbanzos with the salmon to add a little moisture to my salmon patties.
“how do I make this random ingredient taste good”
Yep, that’s how I grew up. My grandmother was especially good at that “game”… we learned early on that it was better if we didn’t ask her what, exactly, we were eating. ![]()
Your salmon patties look tasty, tho!
Oh my!
My random ingredients are never that scary…just free veggies and the like from neighbor’s gardens (but if anyone has any recipes that make squash fun I’m all ears. I’ve tried them all, and it’s only ever okay at best).
These looks tasty, I will try them. Thanks for the recipe!
