1/2 cup butter, softened
1/2 cup light brown sugar, packed
1/4 cup granulated (white) sugar
2 large eggs, room temp
2 medium-sized mashed ripe bananas
1 tsp vanilla extract
2 cups all purpose flour
1 1/2 tsp baking soda
1/4 tsp table salt
Preheat oven to 350 degrees F
Combine dry ingredients in medium bowl and set aside. Cream butter and sugars, add in eggs one at a time, add vanilla, add dry mix, and lastly add in bananas. Mix thoroughly and pour into buttered 9x5 loaf pan. Bake for 60-70 minutes or until toothpick comes out clean. Cool for 10 minutes then continue cooling on wire rack. I like mine warm with butter and honey or toasted the next day.
