A friend posted a recipe for cherry cheesecake shots with cinnamon whiskey, and it sounded like a nice treat to bring to a Halloween party that I was going to. Only trouble is, my DH doesn’t like cherries. Still…cheesecake shots!
Years ago I had found a recipe for Caramel Apple Sangria, and that was delicious. So, I figured I could put the two together, make something edible. People would be drinking, so I was certain that I wouldn’t be judged too harshly if they fell short of delectable. But, they did end up tasting quite good. No leftovers.
These also work just fine as tiny desserts without the booze.
Crust:
1/3 pkg graham crackers, crushed
4 tbsp butter, melted
2 tbsp brown sugar
Filling (cream together):
2 8-oz pkg cream cheese
1/2 cup caramel vodka
4 tbsp sugar
Topping (saute all ingredients, except vodka, until apples are tender and sugar is caramelized; stir in vodka):
3 large granny smith apples, peeled and diced
3 tbsp water
2 tbsp maple syrup
2 tbsp brown sugar
1 tsp cinnamon
1 tbsp butter
1/4 cup caramel vodka
Spoon into cups, cover, and chill. Makes about 30 2-oz servings.
