Chaffles for the win!

My husband is diabetic and playing fast and loose with his diet landed him in some hot water recently. So we are making some adjustments. Since I need to be watching more what I eat, this is a very good thing!

Anyway, I tried chaffles this morning. They were surprisingly tasty! Much better than anticipated. I’ll definitely be making them again!

4 eggs
1/2 c almond flour
2 tsp vanilla
2 tsp non calorie sweetener
1 tsp baking soda
2 cups shredded mozzarella

Preheat the waffle iron to med-high. (Mine has 2 settings: on or off.)
Beat the eggs, whisk in almond flour, vanilla, sweetener and soda. Stir in mozzarella.

I used a good sized spoonful in each of my waffle wells which filled them fairly well without a lot of excess. I got 10 waffles from the batter, which came out to about 2 carbs per waffle.

Those look really good! Would leaving the sweetener and vanilla out hurt the texture or end result, I wonder?..I think they’d be nice done as a savoury dish too.

There is so little sweetener and vanilla here. I’m pretty sure adding some savory flavors instead wouldn’t hurt a bit!

I bet the savory kind would be great for chicken and waffles, which is sort of a local dish here in Pennsylvania.

I’ve been looking for a waffle iron at thrift shops recently.

These waffles look yummy and I really like the idea of savory waffles too.
