Chicken "Piccata" (no alliums)

We have some weird food allergies & issues, so I made a safe version of Chicken Piccata for us & it was really delicious.

I don’t have a proper recipe, because I use what I have in the moment, so here’s the basics (this served 2)

Base

-I used a rainbow mix of carrots, cabbage, & kale

-lentils (I used a can this time)

Cook the mix in a little oil or butter until soft, salt & pepper, add lentils.

I then divided the mix onto plates

Chicken

In the now empty pan I cooked the 2 chicken breasts until cooked through in a bit of oil until cooked through salting & peppering both sides

Remove chicken from pan ( I placed it on the mix)

Sauce

Butter

Lemon (zest & juice)

Capers I used 3Tablespoons for 2 servings (I love Big Picture Foods- Wild foraged capers, but use what you like)

Cream (optional)

In the same pan add 2 Tablespoons of butter scraping up any brown bits. Add the lemon zest & the juice (carefully). then add in the capers & a dash to a glug of cream if you like. You aren’t really cooking the sauce, just heating it all together. Pour over the chicken & base.

And I second this! There’s a reason food photography is its own specialty - a lot of food ends up looking like a shiny, tan mass. Dinnertime is often terrible lighting-time!
