Chicken & Spinach Parmesan Noodles

Fry
1 Diced Chicken Breast
2 Tbls Butter
Blend in 2 cloves of Garlic just before the chicken is done, continue cooking til the chicken is fully cooked.
Mix in 3/4 to 1 cup of frozen spinach, continue cooking for about a minute or two (Add one or two minutes for fresh spinach).

Stir in 1 cup of milk and 1 Tbls of flour. Mix together with
1/8 c. chopped green onion
1 or 2 Tbls chopped parsley

Continue cooking for about 2 minutes then blend in 2 Tbls. Parmesan, Aged asiago, or any cheese of your choice.

Salt and pepper to taste.

Options:

Finely chop two medium horseradish or mustard greens with the spinach to give it an extra kick.
Mix in 2 Tbls of white wine with a sprinkling of lemon juice.

Mmm. Sounds delicious and so versatile!

Now that I have found a delicious gluten-free pasta, I am able to make more “pasta” dishes! This sounds simple and yummy!
