Coconut milk and shrimp pasta

I finally felt crazy enough to try this, and it’s pretty good. Definitely different, heh.

mix and set aside.

3/4 c. Canned coconut milk (Sa Via brand is what I had)
1 Tbls. Flour
pinch each of nutmeg, clove, and ginger
a few drips of a lemon

in a pan, saute onion til soft
add cooked shrimp and a clove of crushed garlic. Continue cooking for a little more than a minute.

Pour in milk and bring to a simmer, add cooked noodles and a little water from the noodles. Bring to a boil, then add a pinch of paprika, salt and pepper to taste. Cook for about two minutes, then blend in one tablespoon of parmesan (i used aged asiago and romano).

Anyway, WOOOT! I found something that isn’t so heavenly…erm…I mean heavily milk based. :rofl:

So wait and see how my tummy reacts to this. :crossed_fingers:t3:

Shrimp coconut curry is one of my fave meals that my hubby makes. This one sounds delicious as well! Coconut milk for the win!
