Corn flour pancakes

2/3 c. Instant corn flour (any variety, these are blue corn).
1/3 c. Flour
1 tsp. Baking powder
1 tsp. Salt
1 Tbls. Sugar
1 large egg
Milk

The milk was added before I realized I had a measuring cup clean, heh. Anyway, you want it fairly smooth. Almost in between a pancake and a crepe, as the corn flour will soak up a lot of it.

Let the mixture set for 30 minutes. Fry in a skillet with butter.

Now, I’m not big on sugar, so if you want to eat with some syrups, honey, or else, just leave out the tablespoon of sugar.

I’ve made cornmeal pancakes before, would be interested to see how corn flour vs cornmeal pancakes are.

These look great! The blue corn keeps making me think blueberry pancakes, lol.
