Since I’ve gotten a rather liking to using my cast iron for frying, I used that. Also, I’m used to an electric stove, not gas. So in order to insure I cook this as evenly as possible. I made a ring around the center and lowered the heat to just heat the pan in that center. That way it won’t stick too much to the bottom of the pan (No teeth taught me that trick, heh). Also, it helps to get the potatoes to cook soft without crisping too fast. Then after the potatoes are mostly soft, then I mix in the corned beef.
My ratios are fairly simple, about 1:3 or 1:2 of potatoes and onions (I always chop my onions the same size as the potatoes). So small with small, or large with large. Then I toss in about 1:2 ratio to 1:1 of corned beef to the potatoes and onions. , I think I used three tablespoons of butter to make this. Yeah, I do probably use too much butter, but it works so well, heh.
Niece had wanted me to make hash for quite a while, so I finally have been feeling a little better and got some made. She took off again, but presumably she’ll be back late,
Anyway, although this seems rather basic, this meal is extremely significant. I’m sure all my nieces think the same, but for this one it is one of the major foods for her.
Grandpa lives mostly as stories for her, were as the others got more time with him before his mind slipped too far, and all of us old farts share our stories of grandpa quite cheerfully.
One story, he didn’t cook much. My memories are of store bought can of hash, rice (with butter and sugar), and crawdad tails fried in a skillet, and that’s about it. He really didn’t cook much. No doubt in my mind me cooking this will bring those stories to life for her (Uncle made it for me, grandpa’s food).
Funnily enough, this isn’t the only niece who likes grandpa’s favorite food, heh. When I watched the girls when they were little, late 90’s, the eldest remembers us eating rice (butter, sugar, with my additions of cinnamon and nutmeg). To which she still eats rice that way to this day.
Oof! That put tears in my eyes. Can’t wait for her to try it. Still one of my favorite food stuffs.
