Creamy Buttery Vegan White Bean "Skillet"

This stuff is REALLY good. I saw something similar to this on Pinterest but I did it my own way without the recipe with just what I had on hand. I just ate this with a spoon but Mr. Rage ate it on toast. I think it would be great as a dip too.

You’ll need:

A cup of Broccoli

1/2 cup Earth Balance or other margarine

1 package silken tofu

Lemon juice

1 whole small head of garlic

1 can white beans

1 half white onion

1/4 cup sun-dried tomatoes

1/2 large tomato

At least 1 TBS Italian seasoning

Salt

Pepper

Red pepper flakes

1 TBS nutritional yeast

Melt butter in pan. Cut broccoli very finely and cook till almost done in the butter.

Mince garlic and cook till fragrant. Add at least 2 TBS lemon juice.

Blend tofu then add liquid to the pan. Add salt and pepper to taste. Add seasonings and adjust and cook till very flavorful. You will need to make sure to boil the tofu sauce some to remove the raw taste.

Cut onion, tomatoes, and sun-dried tomatoes. Add to sauce with washed beans. Cook until onions are tender and beans are cooked.

Hopefully you can get the right taste with the little measurements I gave! I just keep adding little by little until it tastes right.
