Easy Salsa

I love salsa - but I hate onion. And I don’t like super chucky salsa. I’ve found a few local restaurants that have salsa I like but have only found 1 store bought salsa that is acceptable (Trader Joe’s Authentica Salsa).

So I make my own. I found this recipe years ago and have been using it ever since. I like this recipe because I usually have all the ingredients on hand. I leave out the onion altogether. And now that I can’t tolerate garlic, I leave that out and add in a couple of Tbs of garlic infused oil.

This makes a LOT - 6 cups. But I can eat it by the spoonful.

Easy Salsa
28 oz can whole tomatoes, drained
2 cans Rotel
½ small onion(roughly chopped) (I omit)
1 clove garlic(roughly chopped) (I subbed garlic infused oil)
1 jalapeño (seeds removed and thinly sliced) (I have used jarred pickled jalepeno)
½ cup cilantro(loosely packed) (I have used freeze dried when I didn’t have fresh)
½ lime(juiced) (I have used bottled)
¼ tsp salt
¼ tsp granulated sugar (I omit)
¼ tsp ground cumin

You can put everything in the blender and blend up. I use a Ninja so I have to do it in several batches and then put in a large bowl and mix.
