Everyday Salad

I wasn’t sure what to call this salad, but my husband eats it nearly every day. It has helped him drop his A1C significantly.

It contains:
Baby spinach
Baby arugula
Costco canned chicken (I used about 1/2)
Cherry tomatoes
Mini sweet peppers
Avocado
Shredded Parmesan
Balsamic vinaigrette

I think a sprinkling of pine nuts would be a tasty addition, too.

Yes. Love a good daily salad. So versatile! I’ve been adding quinoa to mine to boost the protein content a bit. :grin:
