We went to the farmers market this week, and they had some fresh dill, and a fisherman with fresh fish from the coast, so I got some fish fillets and the dill. I made cheese-less Cheddar Bay biscuits and some green beans to go with it for dinner.
For the fish I blended the dill, 6 cloves of garlic, the juice of one whole lemon, and a sprinkle of sea salt in the food processor. Then I put the fish in a baking dish, lightly oiled it, and spread the herb mixture on top. It was baked at 375 F degrees for 17 minutes.
The biscuits were from a mix, because I just didn’t have time or energy to make them from scratch, with vegan cheese subbed for the cheddar. I seasoned the green beans with the extra herb butter from the biscuits, and some of the liquid leftover from the fish (mostly lemon and dill).
It was a delicious (and filling) dinner.
