Fish with Lemon and Dill

We went to the farmers market this week, and they had some fresh dill, and a fisherman with fresh fish from the coast, so I got some fish fillets and the dill. I made cheese-less Cheddar Bay biscuits and some green beans to go with it for dinner.

For the fish I blended the dill, 6 cloves of garlic, the juice of one whole lemon, and a sprinkle of sea salt in the food processor. Then I put the fish in a baking dish, lightly oiled it, and spread the herb mixture on top. It was baked at 375 F degrees for 17 minutes.

The biscuits were from a mix, because I just didn’t have time or energy to make them from scratch, with vegan cheese subbed for the cheddar. I seasoned the green beans with the extra herb butter from the biscuits, and some of the liquid leftover from the fish (mostly lemon and dill).

It was a delicious (and filling) dinner.

Oh, I bet this was wonderful, especially with fresh caught fish. I love dill, so this meal sounds heavenly.

@stitchandstones @endymion @AIMR Thank you! It was indeed delicious, and super easy to make. (Also affordable because we had double up bucks at the farmers market, meaning everything was essentially half priced). Really the best of all worlds, quick, easy, yummy, healthy , and affordable.
