Ghost of Christmas Present Cookies

I messed with a recipe enough that it’s no longer recognizable so these are my own cookie recipe! They feel kind of like a meal and remind me of old Victorian deserts or something. Then it reminded me of a Muppets Christmas Carol. So that’s why they’re named that. They’re orange, almond, pumpkin spice, allspice, and almond extract flavor with a lightly sweet taste. Inclusions of orange-infused raisins and walnuts. Only thing is I used some steel cut oats instead of rolled. I think it would be better with rolled.

Yeah they look kinda like meatballs. Lol oh well. They don’t spread but they’re not really supposed to I dunno. Heres the recipe if you want:

Ingredients
2 tablespoons ground flaxseed
5 tablespoons water
1 cup oat flour
1 cup rolled oats
3/4 cup almond flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1/4 teaspoon pumpkin spice
1/4 teaspoon allspice
1/2 teaspoon sea salt
1/2 cup almond butter
3/4 cup smoothie made of left over orange juice and a fresh apple. (Or just some apple sauce)
1/4 cup maple syrup
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 teaspoon orange zest
1/2 cup chopped walnuts
1/4 cup golden raisins
1/4 cup raisins

Instructions
Preheat the oven to 350°F. Line two baking sheets with parchment paper.
In a small bowl mix raisins with some orange juice to infuse them with orange flavor.
In a small bowl, combine the flaxseed and water. Let sit for about 5 minutes to thicken.
In a large mixing bowl, add oat flour, oats, almond flour, baking powder, baking soda, cinnamon, pumpkin spice, allspice, and salt. Stir to combine.
In a separate mixing bowl, whisk together the flaxseed mixture, almond butter, apple/orange smoothie (or applesauce,) maple syrup, vanilla extract, almond extract, and orange zest.
Pour the wet mixture into the bowl of dry ingredients and stir just until combined. Fold in the walnuts and raisins.
Use a large cookie scoop or 1/4 measuring cup to scoop rounds onto the baking sheets, spacing them about 2 inches apart. Bake for 20-23 minutes, or until cookies are lightly browned around the edges. Cool on the pan for a few minutes, then transfer cookies to a wire rack to cool completely.
Cookies can be stored in an airtight container for up to one week.

They sound quite involved and filling! But I admit to being intrigued.

I remember my mom making similar cookies. They are like muffins and are quite filling!

Looks like they have plenty of fiber, fruit and tasty goodness!

Yeah I didn’t even really realize how involved they are! The original recipe called for some coconut oil and apple sauce but I only had apples and no coconut oil. So I substituted all that for the apple orange smoothie. I use my bullet blender for everything. I make a wicked good super healthy Caesar dressing by pureeing the heck out of pumpkin seeds. I seriously ly recommend getting one of you don’t have one!

The cookies are surprisingly not too filling. I could eat 4 or five in a sitting since it’s not too sugary. The original recipe was for date breakfast cookies. But I switched out dates for walnuts and raisins and switched out all the flavors. :laughing:

Lots of fiber! :joy: And filling but not too much in that a lot won’t make your stomach hurt since there’s way less sugar. Feels like xmas but without the tummyaches for me! At this point I forget how healthy they are cuz I’ve been substituting everything so much! That’s good though, right? :laughing:
