Healthy Air Fryer Fried Pickles (vegan GF)

We are obsessed with these at my house. I’ve perfected a recipe originally from a recipe I found but it’s an entirely different recipe now. Lol.

This is my recipe:

-3/4 cup chickpea flour
-1/2 cup and 2 tbs water
-3/4 tsp salt
-3/4 tsp garlic powder
-1/4 tsp black pepper
-A whole jar of sliced pickles
-At least a cup and a half of panko. I get gluten free.
-A spray bottle with oil or an oil spray. I use olive oil in a spray bottle for oil.

Place pickles on a paper towel and pat dry.

Mix together everything but the pickles and panko until the batter is smooth. Mix the pickles into the batter until they’re all coated.

If you have a bullet blender what I like to do is put the panko in there and pulse it a few times so that the panko pieces aren’t too large and so you have smaller pieces that fill in the spaces between larger panko pieces.

Put the panko in a separate bowl. Take each pickle slice and make sure it’s coated but not dripping. Place in the panko. To get the best coating I like to spoon panko on top of it with a spoon and gently press down. Then flip the pickle over and do the same so the panko is squished into the batter.

Place battered pickles with space between on your air fryer basket or tray. Spray the pickles with a light coating of olive oil, then flip and do the same to the other side.

Air fry at 400 degrees f for 6 to 7 minutes.

Great with ranch. I have a ranch recipe if you would like it.

Fried pickles and fried green tomatoes. I miss those from the South!

Ooh, yum! I love fried pickles. It seems like you are pretty good at creating/modifying tasty recipes that work with your diet (and make me hungry, lol).

I always persist! I have gotten very crafty. I feel like I’ve become a really really good chef at this point cuz I can do basically anything. :joy:

I’ve never had fried green tomatoes! I want to try them. They just don’t have them here in Minnesota. There is quite a few southern things we don’t do here. One time I worked at a hotel and a guy asked me where he could get some good catfish. I had no idea what he was talking about. :joy:

SO cool that you have learned the skills to make what you want to try in a way that works for you! I have yet to try a fried pickle, though I have seen them offered. I have been kind of craving fried green tomatoes, but TheMisterT only grew cherry tomatoes and there was only one green one when the season was over. Maybe I’ll hit up some neighbors who grew more. I should hate them, because I HATE raw tomatoes (and a friend red tomatoe would be too close to raw), but I don’t!

You’ve never tried a fried pickles?! :open_mouth: They’re so delicious. But then again I’ve never had a friend green tomato so :person_shrugging: I definitely don’t like regular tomatoes too much either. If it’s been roasted I can put them on sandwiches and I like salsa but that’s it.

I love pickles (pretty much anything pickled) and it’s hard not to love fried, but I’ve never been a place that has them when I was also going to be eating a snack or appetizer.

I’ve only had fried pickles a couple times and they were good. I’d be tempted to try this at my sister’s place sometime.

I’d love to try fried green tomatoes. I heard the secret’s in the sauce. :stuck_out_tongue_winking_eye:

Also tomatoes are one of those things that’s best fresh off the plant. I always loved a toasted tomato sandwich with butter on both side, mayo, cracked pepper and salt.

If you do make fried green tomatoes my secret is 1 tablespoon brown sugar in the dry ingredients. Takes a little bit of the bite out of the acidic tomatoes
