Oh! I picked up Dr. Praeger broccoli bites and oat bites to try to feed the girls…Ruby at least tried them before telling me she doesn’t like them which is more than I can say for the other one…they will keep getting them on their plates til the boxes are gone at least, lol.

I think my favorite are the spinach bites. They mostly taste like potato puffs. I found that the broccoli ones were a bit… chunkier? Like the broccoli didn’t break down as much as the spinach, leading to a less tender-textured tender. If that makes sense.

Meanwhile I did find some teriyaki tofu at Sprouts!

I stayed away from the spinach because they were so green, lol. I didn’t think that would go over well on the plate.

I was considering trying the carrot puffs though. Next time!

Update on Lentil, pea and potato curry

I used lentils, sweet potato and roasted cauliflower, I’d forgotten to add the peas but I find they go a bit mushy on the second serving. I also meant to add spinach but forgot that too.

The combo of spices, tomato and coconut milk was a great creamy flavour, I didn’t even miss the meat. I don’t even like tomatoes!!

I think this could be made with all sorts of combos of veg.

You should direct @Abbeeroad to your zuke breakfast bars! I bet the kids would eat those! I think that is a great way to sneak in a veg!

@renstar…I am printed that curry recipe because I love peas! I throw them into any dish I can!

I am also going to be making the white bean and tuna salad!

I wish they had more zucchini in them. Once you shred it, then lightly salt & squeeze out the liquid, there was a lot less zucchini than there was oats and crisp rice. Going to keep searching for a more veg-heavy breakfast bar.

So, I saved both of these recipes to my recipe box on NY Times Cooking, and somehow conflated them in my head when I was grocery shopping. So I have the pierogies for one, and the asparagus & English peas for the other. (Technically, I do also have gnocci in the cupboard.) I’m definitely going to use the asparagus & peas tonight, as well as the lemon zest, but can’t decide if I should use the pierogies or gnocchi.

I made a samosa pie last night (I did not make the crust). Not bad!

Mr. Road hates peas but didn’t even notice them in this dish.

I made this Japanese Inspired Chicken Bowl with brown rice & bok choy. I think it would be really good with tofu instead, if you did the freezing & thawing trick, then pressed it well. It calls for rice flour to coat the chicken, and I’m not sure if that would work on the tofu or not, but you could always use cornstarch instead if need be. I’ll admit, I’m a sucker for togarashi seasoning on virtually anything.

I made marsala mushroom gnocchi last night. It is so quick and easy. Here is the recipe I used.

I made huevos rancheros last night. I enjoyed them but Mr. Road did not. So I won’t be making again, lol.

Today’s lunch Cheyenne-Crumb Baked Macaroni (recipe in the comment I’m replying to) with pan roasted broccoli. This has been one of our go to recipes for years, so good!

I made these Zucchini, Corn & Potato Fritters last night. They were delicious. A cross between potato pancakes, zucchini pancakes, and corn fritters.

there are so many good looking recipes on this thread already, but I shall add one more. I have decided to make one meal a week vegetarian to start off with. this was one of the first things I made for that. while she adds cheese and an egg. we never add the egg and often forget the cheese. the first time I made it i didn’t use harissa as I didn’t have it, came out great. I also lowered the spice cause I am a baby about it. it is however simple and really nice to make when it’s cold and gloomy.
