We have SO MANY raspberries this year! I love it! The only problem is they are not super hardy raspberries. They fall apart as soon as you wash them. So I usually just make them into various drinks or eat them off the vine. I’ve made Creamy Vegan Raspberry “shakes” by mixing raspberries with raw pumpkin seeds, almond milk, a little bit of vanilla, ice, lightly boiled dates (in the microwave), and some xanthan gum. Xanthan gum is what people put in frappachinos to make the ice fully integrate into the drink. The pumpkin seeds make for a very creamy smoothie.
Then yesterday I made a raspberry concentrate with some stevia and some very ground-up chia seeds. The chia seeds thicken it up and make it healthier. Although I don’t know why I would do that if it’s going in drinks. Lol. I boiled it all down, of course.
Then tonight I made drinks. Tequila in Mr. Rage’s. I mixed some Bubbly sparkling water, a lot of my raspberry concentrate, and a little bit of orange juice. Very yummy!
