Homemade Pizza with Sauce Recipe

I’m part of an amazing organic CSA that offers bread and meat in addition to fruits and vegetables. We got a big bag of tomatoes, pizza crust, pepperoni, and other veggies in our last delivery and put it to good use.

Since we had fresh tomatoes, we first made a tomato sauce base to use for the pizza sauce. We wanted enough pizza sauce for two ~12" pizzas, which is what this recipe will yield.

Tomato Sauce

1 1/2 cups of grated tomato flesh (cut tomatoes in half and remove seeds, use a cheese grater, and discard the skins)
1 oz tomato paste
1 TBSPN olive oil
1/4 tspn salt
1/4 tspn black pepper
2-3 garlic cloves cut in half
1 tspn dried basil
1 bay leaf

Add everything to a small saucepan and bring to a boil, then lower heat to a bubbly simmer. Simmer for about 15 minutes until slightly thickened. Turn off heat. Remove garlic cloves and bay leaf.

Pizza Sauce

Keep the tomato sauce you just made in your sauce pan and add:

5 oz tomato paste
1 1/2 TBSPN dried oregano
1 3/4 TBSPN Italian Seasoning
1 tspn garlic powder (and/or grate 1 clove of the garlic you used in the tomato sauce for extra kick)
1/2 tspn onion powder
1/4 tspn cayenne pepper and/or red pepper flakes (optional)
1/4 tspn salt (add more or less to taste)
1/4 tspn black pepper (add more or less to taste)
3/4 tspn sugar (optional)

Stir until well-mixed. Use on pizza immediately and/or store in an air tight container in the fridge for up to a few days. (This sauce freezes okay, too!)

We grated mozarella and parmesan, and used pepperoni, onion, mushroom, and fresh basil to make a couple different pizzas during the week.

Mmmm…can’t go wrong with pizza! I bet the home-made sauce really made them special!
