Caramelized the onions (then added some red wine and butter because they started burning while still being crunchy, ). In the mortar are dried basil, oregano, sugar, and fennel. Garlic, of course.
The meat is one pound hamburger, and two italian sausage links with the skins removed.
Pretty tasty even for my inability to taste everything. I definitely taste no sugar, and I think I can sense a tiny amount of the salt (else, I don’t think I would taste as much as I do, ).

For this recipe, I increased it to 1+3/4 cups water, 4 c. Flour, and one tablespoon yeast. Back in the day, I used to add more crust around the edges, brush them with water and sprinkle salt on them, but I didn’t do that with these ones.
