It’s my first time making a pudding pie from scratch.
for months I’ve had a little twitch in the back of my head that a piece of coconut cream pie would be awesome.
But it’s a pretty rare pie to find in the wild.
So I made one. It won’t be my last one.
Served with a fresh raspberry coulis.

A coconut cream pie is the sort of thing that of course I know CAN be made from scratch (by someone else, like maybe a contestant on the Great British Baking Show.) But as you say, it’s not something you usually see in the wild…and certainly never in anyone’s personal kitchen.
