Pink Pickle Party Dip! Recipe

Pink Pickle Party Dip
(yields eight cups)

  • 24 oz Jar of Pickles
  • 8.5 oz Can of Beets
  • 24 oz Sour Cream
  • 16 oz Cottage Cheese
  • Dill Weed to Taste
  • Garlic Salt to Taste

Using a blender (I used a ninja) or knife chop/dice the pickles and beets. Mix with the sour cream and cottage cheese. Add some of the pickle juice to obtain desired consistency (and to add more pickle flavor). You can also add some beet juice for extra color. Mix in dill weed and garlic salt to taste.

Enjoy!

You can adjust all the ingredients to your taste/preferences. I made it this way because it was easy and I didn’t have to measure, just tossed everything together as I bought them :wink:

You could share or take to a party… or not :wink: I won’t judge if you want to keep all the delicious pickle flavor to yourself.

@MissingWillow the beet flavor doesn’t come through much with this ratio but you can always add more! :wink:

I should also add that if you want it to look good then I recommend chopping the pickles and beets by hand and mixing by hand instead of in the blender. But the blender makes it soooooo easy to make!
