Pumpkin Cookie

The kid and I are on the lookout for a pumpkin dessert recipe that is not pumpkin pie.

I tried to make muffins and they were underwhelming.

Then I found this recipe for Pumpkin Cookies by King Arthur Baking. It calls for browning the butter and reducing the pumpkin.

After chilling the dough, I used a 1 TBSP scoop to make little dough balls that I pressed flat with a measuring cup before popping into the oven.

They are not winning any awards for presentation. Heh. The texture we like a lot. It’s a more chewy cookie.

It’s still not screaming pumpkin to us. We’ll make the cookie again just because we like it, but we are still on the hunt for a pumpkin dessert.

These look great! If you like pumpkin and chocolate together, pumpkin chocolate chip cookies are pretty good.

They look yummy. I’ll dig out my pumpkin pie mousse recipe for you if you like. It’s super yummy. I also use it when making fall triffles.

I’d love to try your pumpkin pie mousse! Sounds yum!

So it’s more pudding than mousse in consistency. But here’s the recipe and then a trifle recipe that uses it…and some pumpkin spice oatmeal cookies.

I personally prefer sweet potato to pumpkin, it consistently has the best flavour & texture.

In PA, everyone makes pumpkin rolls! There is even a friendly competition among coworkers, womens’ groups, etc. to see who makes the best pumpkin roll during the season. My coworker Debbie has won 20 years in a row! She has shared her recipe but no one seems to be able to make it exactly like hers. I will see if I can find it… it has cream cheese and yummy cinnamon and lasts quite a while in the fridge, provided it isn’t eaten all up in one day!

We use gooseneck pumpkin for most of our recipes. But canned pumpkin is fine as well and a lot easier/faster.

The kid and I will have to have a pumpkin bake-off. It’s not a terrible idea. We could share with our neighbors.
