Rainbow pico de gallo

My son requested nachos with fresh salsa for their birthday, so I made some pico de gallo. I used heirloom tomatoes in a variety of colors (purple, red, orange, yellow). Tomatoes make or break a pico de gallo, so you really want tasty ones. These are not quite as good as the farmers market tomatoes in the summer, but the heirlooms are better than most grocery store tomatoes. I also used fresh limes and cilantro (green), bell pepper (red, yellow, orange), Anaheim peppers (green), garlic, salt, and onion. The ingredients always remain the same, but quantity is dependent on taste and what I have available. I chop everything by hand, so it doesn’t turn to mush and juice. It’s a lot of chopping, but it is delicious.
