Raspberry Linzer Star Cookies- Great LC Holiday Bakeoff 2024 Entry

Oh, hey. I’ve been gone forever, but was doing some lurking this week during school break and figured I’d join in on some fun!

After this season of GBBO, I felt inspired to do some baking. (And have been baking a lot as of recent.) so, I present to you…Raspberry Linzer Cookies! The only cookies cutters I had in two sizes were stars, so stars it was.

Here’s the beauties themselves…


These were more labor intensive than I wanted them to be. People in the comments said their dough was too crumbly/dry. Mine was a bit too. I went against the instructions to roll them out cold. I popped in the dough in the microwave for 15 seconds THEN rolled and cut. Rolling tended to go better if i kept the rolling pin working in the same direction, flouring as needed. THEN I put the cookie sheet (with cut cookies) back in the freezer for a couple minutes to cool the dough. I think I may make my next batch slightly thinner. They do rise a bit and with two cookies stacked, it’s a lot of cookie. (Which I love, but those with more refined palates may not. lol)

P.S. I’ve always wanted to pop in to give a life update, but I have no idea what thread I’d post it in, so here’s a quick one: My undergrad is finished! I’m currently getting my masters in library and information science. I’m loving my library job and am in charge of the monthly adult craft kits. I’ve been making 100 craft kits every month for the past two year and a half years. :upside_down_face: I’ve even hosted a couple craft programs (watercolor, cross stitch, painting). I will graduate in 2026 and hopefully get a full time librarian position after that. I still think of you guys often, especially around Christmas! :yellow_heart:

Love your life update and that you were able to incorporate some crafting into your job, too. My brother is a librarian and loooooves it. He was with his last library (Case Western) for just short of 20 years. :books:

Congratulations on the studies and the employment. Libraries are my happy place, and we love the kits and activities at our local library. I’m glad you are making that happen for your community!

They came out lovely and look scrumptious! Good luck with your degree and eventual job hunt! Librarians are some of my fave people.
