Recipe: Spätzle - German Style Pasta

Ha ha kitchens are like craft rooms in a way. I always use lots of items and make a mess. My man hates messy kitchens and always cleans up immediately. When he cooks it’s always tidy and when I cook he cleans around me. Sometimes that ticks me off but in general it’s really nice to have a tidy kitchen.

What I really had to get used to was his no appliances running when nobody is at home policy. He’s been a firefighter for all his life and has seen most home appliances catching fire or drowning the house in some call.

I make some version of it pretty regularly. For some reason most people just buy the dried version of it because they think it’s too difficult to make.

Yum!!! I should make this more often. I love it. I have the same spatzle grater thingy. Bought it after a trip with the spuds when they were young. We were traveling in Amish country, watched an Alton Brown show on Spatzle in the hotel, they bravely tried it in a German restaurant the next day. Then spud 2 decided he could make it himself. Found the thingy in an Amish general store. Been making it ever since. Such as easy way to make a side dish. So glad you didn’t leave out the nutmeg. For whatever reason, it is really important.

Today I made the spinach version as a side dish. Maybe you want to try that version, too.

To make this just boil 500 grams of spinach for about 5 minutes. Let it cool a bit and squeeze the water out. Then cut it in a food processor.

And add it to the batter

Proceed as you would do with the regular batter.

Yes it’s perfect for spring. I sometimes use wild greens instead of spinach. There are so many different edible plants growing everywhere around us. And a bit of foraging is always fun.
