Recipe: Spätzle - German Style Pasta

I made a very traditional German dish for dinner tonight and thought I could share some pictures of it here.

It’s Kässpätzle (Cheese Spätzle)

Spätzle are a type of noodle and the dish itself is not unlike mac and cheese.

They are not made from pasta dough but from a rather runny batter, here’s the recipe:

Ingredients:

  • 400 g all purpose flour
  • 2 tbsp semolina (can be substituted with cornmeal)
  • 4 eggs
  • 180 ml sparkling water
  • 1 ½ tsp salt
  • 1 pinch nutmeg

Combine all ingredients except the water.
Then slowly add water until the batter is slightly runny. It should drip from a spoon but not flow too much.

Let it sit for around 15 minutes. I don’t track the time here and just let it sit for as long as a large pot of salted water takes to start boiling.

Then the batter is pushed through a Spätzle grater into boiling water

After a couple of minutes they float to the top and can be taken out

There are loads of recipes you can use them in, but today I layered them with lots of grated cheese in a casserole dish

I forgot to take a picture when I took it out of the oven and it disappeared quickly. I topped it with some shallow fried onions.

Chicken Paprikash was a beloved special treat at the traditional Ukranian restaurant where they made the dumplings exactly like Spätzle. So delicious!

We have an excellent shop here where we can buy all sorts of yummy goodies from Germany. It is about 40 minutes from my house so I only go there when I am in the area. I do have a package of dried spatzle but for sure it is not the same as fresh! My nanny and my mom made a beef gravy for it when we lived in Germany.

YUM! I also love spätzle, but have only rarely had it. I am going to have to remember this come the cooler weather when heavier, richer food is craved, and ask TheMisterT to make it!

@AIMR that’s really good, too. Add some braised red cabbage and you have my son’s favorite food. During the colder seasons I often add Spätzle to stew. I also like to add spinach to the batter and serve it with a creamy sauce with bacon strips and parmesan cheese.

Yummy! Those additions sound so good! I just added that maker to my shopping list. I am sure my husband will be impressed as his family ate spatzle a lot more than my family! I bet he would like to try some of his grandma’s recipes.

My dad was stationed in Pirmasens with the Army. My brother was born there as well. I walked to kindergarten when I was 4.

Making Spätzle is so easy with the right tools. And it doesn’t that much longer then cooking dried spätzle. But it’s a bit of a mess.

My husband is the messiest cook ever! I don’t know…but there is something comforting to me when a kitchen looks like it was actually used. The friends I have that are great cooks seem to always have one of those kitchens that look a bit messy after they cook! ha ha
