My in-laws came to visit, and I needed an easy dinner to feed all 6 of us. A visit to the farmers market yielded an abundance of veggies, and I already had rice noodles, so I decided to make stir fry. I know my father in law loves peanut butter, so I went with a peanut sauce. I used rehydrated peanut butter powder in place of the peanut butter to make it healthier. He loved it so much that they asked for the recipe and they are coming back to have it again next week (and they live over 3 hours away). As a bonus, he is diabetic and it didn’t spike his blood sugar. It is also gluten free, dairy and egg free, vegetarian (not vegan due to the honey in the sauce), and incredibly versatile in what veggies you can use with it. A good avoids-food-issues dish as long as no one has a peanut allergy.
Yum! Looks great. Just a note about the soy sauce: people with celiac disease who need to avoid all wheat sources should use tamari as a sub for the soy sauce. Most SS has wheat in it.

I didn’t realize that, thanks for the heads up. Celiac isn’t a concern in our family, but we do have some gluten free friends. Coconut Aminos can also make a good soy sauce substitute.
