This would be an excellent compliment to a summer BBQ.
I peeled 4 cucumbers and sliced them on a mandolin, along with a red onion, into a large glass bowl. I also sliced (with a knife instead of the mandolin) and added 4 sweet peppers in various colors. Then I sprinkled the lot with a couple teaspoons of kosher salt, mixed it thoroughly, and let it sit for 20 minutes to macerate.
Using a large colander (with small holes), I drained off the excess liquid and then put the mixture back into the bowl. In a separate, smaller bowl I added 6 tablespoons of rice vinegar (yes I know that I could have just done about 1/3 of a cup, but I was doubling a recipe…) and 4 teaspoons of sugar and stirred it until the sugar was pretty much dissolved, then poured that over the cucumber mixture and stirred it up. I put the lid on the bowl and put it in the fridge. Ta-dah!
I hate cooking, so easy recipes make me happy.
This will keep in the fridge nicely for about 3 days and can certainly be made ahead of time for a summer shin-dig. There are some cool herbs / spices that could be added, too (although not necessarily all of them in the same batch ): fresh ground pepper (which I meant to add and forgot…), mint, dill, oregano…. Etc.
