I looked at way too much Pinterest while I was out with COVID and got the idea of making gnocchi. The ingredients are super simple but it is a bit of a process. Maybe a bit too ambitious while I am still exhausted.
Here’s the recipe:
Boiled and then sauteed in oil. I should have taken a pic of them all lined up perfectly on their tray right after I shaped the little tedious lovelies…
Made a tomato sauce with garlic, yellow onions, green onions, orange bell pepper, pine nuts, hemp seeds, and oregano.
Husband said it was really good, so that’s a win. Not bad for needing another nap.
