So…this was almost the cake that wasn’t meant to be.
I saw this New York Times recipe post about a Thai tea tres leches cake and it sounded positively sinful. I did my research and picked out a tea that tons of folks recommended as authentic. By the way it’s fabulous, we tried it out and it tastes just like the tea at a Thai restaurant.
We whipped up the Thai tea infused tres leches sauce and all was going good. We strained out the leaves after this pic was taken.
Then I followed the recipe for the cake and it was a miserable rock hard failure. I was very sad.
I looked up a different recipe and tried again. We tried to whip Thai tea infused heavy cream into whipped cream but it skipped the whipping cream stage and turned into butter.
Eventually we got some plain heavy cream whipped and then added a touch of the Thai tea heavy cream for flavor. It was a bit of a frustrating journey but the kid loves it so we’ll make it again.
I’m curious to try other possible flavors.
