Vegan GF French Silk Pie

I asked my partner what pie he wanted for Turkey Appreciation Day and he said French Silk. I couldn’t find a recipe I liked so I made up my own!

The chocolate part is made from dates, coconut cream, bakers chocolate, vanilla, salt, and a little bit of coconut sugar that I powdered in my blender. I tried to make the whipped cream with coconut as well but my coconut milk wasn’t solidifying for some reason so I ended up using Silk vegan whipped cream. That was a bummer since I wanted to use as unrefined as possible ingredients. Oh well. I powdered up more coconut sugar and added vanilla, salt, and a tiny bit of apple cider vinegar for depth of flavor. That’s what you use to make things taste more like dairy. Odd, but it works. I made a basic gluten free crust and I made some chocolate flakes out of coconut oil, a tiny bit of bakers chocolate, and coconut sugar.

It turned out really good but it’s very rich so it’s best in small amounts.
