The kid in me, who used to watch Mr. Wizard growing up, was the voice in my head telling me to try it at all. I’ve thought about making candied violets before, but this jelly was really a hands-on science experiment with an edible side effect. The colors are amazing. I imagine it would be so much fun to do with children. My “kid” is 18 and in that “too old for childish delight” phase.

We made beverage using Empress 1908 (gin). The gin is a deep purple, and the acidity from the lemon swirled around like a marbled gazing globe, and turned the purple to a lovely lilac.

I was completely enthralled. It was wicked cool. And this reminded me of the same. Science/chemistry is awesome!

It’s beautiful and I bet it tastes great too. I have to say, I read that as violent jelly at first lol.
