Chocolate Raspberry Merit Badge Cake

I love making cakes. I made my son some epic birthday cakes growing up. But he hasn’t been into birthday parties in years, so it was fun to get to return to it for his Eagle Court of Honor. He wanted chocolate and raspberry but left the rest of the details and decorations up to me.

I went with 6 layers of chocolate cake, with chocolate ganache and raspberry filling between each layer, and vanilla swiss meringue buttercream. I tinted the buttercream green to match a scout merit badge sash and topped with Fondant Merit Badges. I didn’t quite manage all of the ones he earned, but most of them!

It was delicious! And I learned to do the cake cutting where you end up more with tall rectangles which worked really well.
