Cutting carbs

I’m not a great cook. I dislike cooking most of the time. But l have few simple things I enjoy making.

Caprese Salad:
I container grape tomatoes, cut in half lengthwise
1 package of fresh basil, chiffonade cut
Shredded mozzarella cheese (sliced cheese sticks work great also)
2 tablespoons olive oil
1 tablespoon balsamic vinegar (you could do less- I just really like balsamic)

Mix the oil and vinegar together and whisk like crazy. Then pour it over the other ingredients and toss everything together. Looks awful, tastes lovely.

Parmesan Zucchini

Slice zucchini in rounds. Spray a cookie sheet with baking spray and lay the rounds of zucchini on it, then sprinkle them with salt and pepper. Place a small amount of shredded Parmesan on each round. Place under broiler until the cheese melts and crisps up a little.

I can eat an entire pan of this. Huge favorite!
