Onions do not agree with Mr. Road so I left them out. I also puréed about half because I didn’t do the overnight thing. They were still a bit runny. I could see overnight being much better.
Lodge makes a few styles. I do love cast iron, it’s the ultimate non-stick.
Rob recently found a very cool app:
Yuka is a free mobile app that allows you to scan the barcodes of food and personal care products and instantly see their impact on your health . A rating and detailed information help you understand the analysis of each product.
Took it to the health food store, what a revelation.
Good luck!
We had a box from a friends little farm for a summer. Lots of weird greens and interesting root veg. Things I learned:
-even a small amount of jerusalem artichoke will override the flavour of everything else.
-tough greens can be quickly steamed for just a minute and frozen, then crumbled into recipes which makes them easier to chew.
-tough veg still makes great broth.
I didn’t know I’d get to make choices from what was there! I came home with salad turnips (alternate choice was beets), a head of bok choy, garlic scapes, 2 heads of lettuce (picked a purple and a green), kale, and strawberries (alternate choices popcorn or basil). And I had added on a loaf of bread from a local bakery to my weekly boxes. He had 5 types, and I came home with the Sourdough. (I feel like you can tell a lot about a bakery by its Sourdough.) Next week I’ll try his whole wheat.
Here’s the salad I made for dinner. Green lettuce, Persian cucumbers, avocado, freshly toasted pecans, the most amazing strawberries, and a homemade lemon poppyseed vinaigrette. Oh, and some bacon that I needed to use up. Sorry friends. But hey, there’s certainly a lot less meat in this meal than in others.
It was good. The salad turnips I got from the CSA didn’t have their greens on them, so I roasted some zucchini to replace it. I feel it would have benefitted from the inclusion of some lemon zest.
I made a version of these burgers over the weekend. I realized afterwards I had made them before, lol. I made some swaps this time based on what I had on hand…swapped in bulgur for the quinoa, left out the cheese, added some seasonings. I also didn’t do any of the toppings. They went on the grill no problem!
Yes, I have almost caved with chicken a few times. But I’ve stayed strong. I say chickpeas are my chicken now. I have them at least once a week, usually more!
We’d love to hear about some of your favorite veggie recipes, too. I know several of us are always looking to try out new things!
I tried BBQ jackfruit when we were in FL and I agree. It wasn’t strong enough to carry the intense flavors layered on top of it, which became overwhelming as a result.
We didn’t make them but it seems easy enough.
It was Open Streets here today. Pretty dull except for those tamales. We had a nice bike ride & lunch, it was a good day!
I’ve been mostly vegetarian for well over 10 years now, so I have a few recipes I could share
I say mostly vegetarian because I do still eat fish off an on, and if I visit someone who didn’t know, and they’ve lovingly prepared me a meal that contains meat, I will still eat it.
Anyway, I hope it’s Ok to share a link from one of my blogs for a red lentil soup that’s about the only dish all my kids will eat unaltered (except sometimes addding some frozen corn or peas to cool it down so they can eat it sooner):
Here’s a recipe for Brazilian rice (I was born an raised in Brazil, so this is a pretty frequently staple at our place):
It goes great with pretty much anything, especially Brazilian black beans. I don’t have a recipe for that handy atm, but I might add it later on.
If you have leftover rice after making it, you can make fried rice the next day by adding lots of cut up veggies and your favourite sauce and spices. You can use paprika to turn the fried rice slightly red or turmeric if you want a yellow look.
And here’s a recipe for some unusual but delicious pancakes:
