This was dinner.
I made a few changes. I left out the onion (gross) and I used homade taco seasoning. I also left out the green chilis as I wasn’t sure my niece would eat them. I also added about 1/2 cup enchilada sauce (all I had), 1 Tbs tomato paste and 1/2 cup water to the meat mix to make it a little more moist. And I used extra cheese!
I topped mine with lactose free sour cream and pickled jalapeños.
