I agree with everyone - post more baking! Do you try to figure out what temp the oven is or just go for it when it feels right?

Oh yeah, more baking happening soon. I got sidetracked by moving our bike shop into a big new building but once I get some paperwork done and things a little more organized there, I have plans for more focaccia and my first try at gluten-free sourdough. (Eventually I’ll get a fridge and an oven at the bike shop too.)

So far I just guess at the temp. I keep meaning to get a thermometer but we worked out how to more or less reach 350 so we work up from there as needed. I’m still working on ways to raise or lower what I’m baking without destroying everything we own. This is how I broke the pizza stone.

So far the only bake that got weird with guessing the temp was an apple cake. I closed up the oven to try to raise the temp and, instead, the fire went out and the cake got smoked for an hour till we got the temp back up. It still turned out pretty good though.
