Onigirazu with crunchy fish

This year I’ve been trying to actually make/do at least some of the stuff I save on Pinterest.

One of the things I made was “onigirazu,” which is a Japanese sandwich made with rice, seaweed, and fillings.

I filled mine with an omelet and “crunchy fish (tilapia),” which I make by dipping the fish in egg and then rolling it in crushed corn flakes.

I also fried some fish on its own for my husband, who doesn’t like seaweed.

It turned out really, really good. It was a bit labour-intensive, but I think I might make it again some time.
