Peach and Pepper Jam

A few weeks ago, @LuckyDog and I decided to try our hand at making peach and pepper jam. My mom’s friend had gifted some a few years back and it was delicious - and she was gracious enough to share that she had used this recipe. I’ve only ever made freezer jam before this, so I was grateful for his expertise. All in all, I think we did pretty well for ourselves!

The peaches weren’t overly juicy and at first we were concerned that there wouldn’t be enough liquid, but it’s amazing what happens when you start heating everything through:

It came out so pretty and reddish-pink!

It came out a little bit spicier than the jar I had been given…maybe our peppers were bigger? But the peaches lend a nice sweetness and it’s delicious spread on crackers (with or without a thin smear of cream cheese). I think this recipe’s a keeper!

my fave way to eat this is ginger snap cookie, cream cheese, pepper jelly on top. Bravo on making this!

Oooh, I love a good peach or mango salsa and I suspect this is kind of like that. I bet it would make a lovely complement to fish, like mint jelly is used with lamb.
