The photos don’t look appetizing, but these were delicious.
Once upon a time I had a recipe for this, but I can’t for the life of me find it, so… I just kinda threw these together.
Chop a bunch of veggies, add whatever spices you want (I used salt, garlic powder and just a tiny bit of cayenne pepper).
Put some all-purpose flour, salt, soy milk (or regular milk) in a bowl and mix everything. Then throw in the veggie mixture and mix it into the batter.
If the batter is too thick, you can thin it out with more milk or veggie broth.
Heat some vegetable oil in a frying pan (or use cooking spray), and dump dollops of batter in the pan, using the back of a spoon to even out the thickness (thinner pancakes will be crispier and will cook faster).
Fry on medium heat until cooked through, about 3-5 minutes per side, depending on how thick you make the pancakes.
