I like to make my own veggie broth, because it’s tastier than the one from the store, it’s fun to make, and… it’s basically free!
All I do is fill 1-2 large freezer bags with veggie scraps, the stuff you would normally either put in the bin or compost: tops and skins of onions, garlic, carrots, etc. Vegetable skins that you peel off for other dishes, etc. Once I have at least 1 bag full, I dump it into my biggest pot, and add water to cover.
Then I add spices to my liking, and I make it differently each time. I always put in a general helping of salt (my low blood pressure thanks me), and usually garlic powder, cumin, and Mrs. Dash, though I’ve added other things before, including Italian seasoning, etc.
I cook that over medium heat until it comes to a boil, and then I let it simmer for about 45 minutes. However, I have simmered it for less time than that in the past and it still tastes fine. The extra time definitely makes it more flavourful, though.
After simmering, I put a smaller pot in the sink with a strainer inside it.
I then carefully pour the liquid into the strainer.
And voilà! Fresh veggie broth to use in recipes like Red Lentil Soup!
