Socca (chickpea flat bread) & Red Lentil Soup

Tonight I made red lentil soup again, and I thought I’d try a new recipe. This is called Socca and it’s flatbread made from chickpea flour. I used this recipe from the kitchn.

It’s supposed to be baked in an iron skillet in the oven, but hubs had taken ours camping and it got packed away with camping stuff. I had no clue where it was, so I just made it in an oven-safe stainless steel frying pan. I want to try it again in an iron skillet. My pan is too large and it didn’t work well for the amount of bread I was making. It still tasted realy good, but the texture was off. I want to make it a tad crispier next time.

I think I’ll also add some spices next time.

I was just craving lentils last night, this soup sounds tasty!

It really is! And it freezes really well gor a soup with almost no fat in it. I’d recommend blending it a bit after defrosting.
