Tofu scramble

I made this a while ago and forgot to post. Super simple, delicious, and nutritious.

It’s basically just crumbled tofu, sliced grape tomatoes, and spinach fried with garlic, onions (you can use powdered), and turmeric. I think I put a tiny dash of cayenne pepper in it, too. Cooking it in an iron skillet also increases the iron content.

The turmeric adds the nice familiar color that people know in scrambles! Looks yummy and yet is is very nutritious and high protein!
