My girls love Mr. Noodles, which is an instant ramen brand here. I love it too, but I feel like just having the noodles doesn’t really fill me up like it should, and I wanted to add some more nutrients in there. So I cleared out the fridge and made some hearty instant ramen.
I’ve been trying hard to create meals from leftovers, as I was concerned by the food waste that was going on at our house. I’m also enjoying trying to use up as many parts of veggies, mushrooms, etc. as I can. To that end I’ve made pulled mushrooms from the stems after I broiled their tops, and I’m inventing my own kinds of fried rice, using up stuff in the fridge as I go.
Another meal I made this summer that turned out delicious was a tofu one-sheet meal that I broiled in the oven. Choosing the broil setting dried out the tofu a little and gave it a great texture.
