Homemade Ranch Dressing - FODMAP Friendly

I have issues digesting lactose and whey and recently realize garlic is also a problem which was a sad realization as I love garlic. Which is an issue when it comes to salad dressings. Everything contains garlic (and/or onion - gross).

But the fructan compounds in garlic that are an issue are only soluble in water. Not oil so I can have garlic infused oil. But store bought garlic infused oil is kind of anemic in flavor so I made my own

Garlic Infused Oil

  • 2 cups oil - I used light olive oil
  • 12 large garlic cloves cut in half

Warm the oil in a pot until just warm. Take off burner and put in garlic and let sit for 2 hours. Strain the oil and toss the garlic.

Keep the oil in the fridge for a week or freeze ( botulism is the concern here.

Homemade Ranch - lactose and garlic free
1/2 cup lactose free milk
1/4 cup mayo
1 Tbs lemon juice
1 tsp dried dill
1.5 tsp dried parsley
1 Tbs garlic infused oil
1 tsp Dijon mustard
Salt and pepper

Combine all the ingredients in covered glass jar. Let sit for 10 min. Then shake vigorously.

This is better once chilled.

my sister-in-law makes homemade ranch and I gotta tell ya, she spoiled me because I won’t buy it off the shelf anymore. I’m going to try your recipe as well it seems very similar (from what I remember)
