Potato pancakes-made from leftover naked taters

Good morning! I made potato pancakes this morning from mashed taters we had last night. I tend to not have leftover mashed potatoes but last night I did.
2 cups mashed potatoes
1/2 cup AP flour
1 egg
1/2 cup bacon bits
1/2 cup shredded cheese
1/2 small onion diced finely
Salt and pepper to taste
Thyme
Parsley
Garlic powder
I don’t measure those last 3 I just give a couple healthy shakes
Oil for frying

Combine all ingredients and divide into quarters. Heat oil over medium high heat and drop divided batter into hot oil. With back side of spatula flatten out patty. Fry 3-5 minutes per side (be gentle when you turn them over)
Garnish with chives if desired and serve with sour cream
Enjoy!

These look yummy!

My mom used to take leftover mashed potatoes and combine them with some ground beef and onion to make potato croquettes for us. It was a cheap and easy meal but we kids just loved them. In Japan, they are served with wooster sauce (can’t spell that word for the life of me…)…

I think my hubby would like yours better!

yours sounds amazing! My mom makes them but puts HUGE honkin’ pieces of onions in them, I prefer them finer chopped :onion:
